Peruvian rotisserie from CVI.CHE 105 founder Juan Chipoco, built on wood-fired chicken rather than the ceviche focus of his flagship. The room mixes glass panels with wood and stone and hangs neon signs carrying Peruvian sayings, which lands well away from the usual fast-casual chicken look. The menu carries on past the chicken into ceviches, grilled meats and maki.
