COTE Korean Steakhouse was founded by Korean-American restaurateur Simon Kim, who opened the original location in New York City's Flatiron District on June 8, 2017. Kim, born in Seoul, conceived COTE as the first restaurant to marry Korean barbecue with a high-end American steakhouse, a concept he called the "Korean Steakhouse." COTE Miami opened on February 12, 2021, in the Miami Design District, in a 5,892-square-foot former furniture store built from scratch. Executive Chef David Shim leads the kitchen. A third location opened in Las Vegas in October 2025.
Tableside Korean barbecue with premium American steaks. The design features smokeless tabletop grills, a red-lit dry-aging room visible from the dining room, and a vegetable fermentation lab. Signature offerings include 45-day USDA prime dry-aged beef, the Butcher's Feast (chef's selection of four cuts with Korean banchan side dishes), and the Steak Omakase, an elevated multi-course tasting experience.
