Major Food Group's red-sauce Italian blockbuster. Spicy rigatoni vodka, tableside Caesar, and old-school supper club theatrics in a packed room. The Miami room opened in 2021, carrying what Wine Spectator calls "the swagger and decadence" of the New York original. Evan Davis runs the kitchen. John Slover and Andrew Schawel built the wine program, Italian at its core with grower Champagnes alongside, and Wine Spectator counts 920 selections on it.

The Story
Major Food Group, the hospitality group behind the original Carbone in Greenwich Village, opened Carbone Miami Beach on January 26, 2021, in the South of Fifth neighborhood. Founders Mario Carbone, Rich Torrisi, and Jeff Zalaznick brought their Italian-American institution south during the pandemic, partnering locally with Alex Pirez, and the Miami outpost quickly became one of the hardest reservations in the city.
Known for
Old-school Italian-American red-sauce cooking done at a fine-dining level: Caesar Salad alla ZZ, Carpaccio Piemontese, baked clams, and veal Parmesan headline the menu. The Ken Fulk-designed room leans into a decadent, retro-supper-club look, with malachite ceiling beams, damask-upholstered walls, and Murano chandeliers and sconces.
Worth knowing
Reservations are notoriously difficult and should be booked well ahead through the restaurant's official channels; it's dinner-only, nightly from 5:30 to 11 p.m. Guests are expected to dress for the occasion (no shorts, open-toed shoes, or tank tops), and management can turn away guests who don't meet that standard.
